Suntava Purple Corn™ Bars
- 4 cups Suntava Purple Corn crisps
- 3 cups old fashioned rolled oats
- 1 cup 14-mesh IntegriPure® brown flaxseed
- 1/2 cup brown sugar
- 1 cup honey
- 1/3 cup coconut oil
- 1 tsp sea salt
- 1 cup peanut butter
- 2 tsp vanilla
- 1/2-1 cup mini chocolate chips or
- peanut butter chips
Yield: 32 bars
- Toast oats and flax separately in a pan on stove top. Allow to cool.
- Once cooled, combine crisps, oats and flax; set aside. Line a cookie sheet with parchment paper.
- Heat remaining ingredients on stove top until combined, reserving chocolate/peanut butter
- chips for later.
- Mix all ingredients well and pour onto cookie sheet, spread out and press until even.
- Sprinkle mini chocolate chips or peanut butter chips onto the mixture and press into the bars.
- Cut bars to desired size.
